Foraged from the low lying hills of Tuli, Mokokchung, these wild bamboo shoots are soft yet firm and crisp. They are harvested at their early growing season of June to October  to provide the highest nutrients, texture and flavour. With no preservatives used they are fermented  either shredded into fine pieces or in big chunks in air tight containers. The fermented bamboo shoots can be eaten after a week up to a year.
